Campfire Cooking Recipes – Skewers

It can be fun trying out campfire cooking recipes over an open fire surrounded by friends and family while enjoying the sounds and smells of the great outdoors all around you.

Make ahead of time this glaze for the chicken kabobs:

1/4 cup orange juice concentrate, thawed
2 tablespoons of honey
1 tablespoon soy sauce
A pinch of ground ginger

Skewers Ingredients:

1 pound boneless skinless chicken breast halves, cut into 1″ pieces
1 cup fresh pineapple chunks
1 medium green sweet pepper, cut into 1″ pieces
1 medium sweet red bell pepper, cut into 1″ pieces

Taking 6″ long skewers, alternate chicken, pineapple, green bell peppers, and red bell peppers, leaving about 1/4″ between each piece for basting. Place the skewers on the rack of an uncovered grill directly over medium heat and grill for about 12-14 minutes or until no longer pink. Place them on coals, flip, and brush with glaze during the last 5 minutes of broiling time to help prevent glaze from burning. If you are using wooden skewers instead of metal, it is best if you soak them in water before grilling or they may catch fire. You should soak them in water for about twenty minutes before using them.

Campfire Roasted Sweet Corn

You will need about 6 ears of husked sweet corn, remove the husks from the corn but do not remove the husks. Clean all the silk from the corn and rinse, sprinkle with salt and pepper. Wrap the corn in the corn husk and tie with damp kitchen string. Place on a grill over the heat but not where it will char and slowly turn and grill the ears on all sides for about 25-30 minutes. You will want to start with the sweet corn before the skewers.

Campfire cooking recipes should be tried with cast iron cooking as a bonus when it comes to roasting some veggies in a Dutch oven like celery and carrots with a little spice and any leftover chicken could turn this dish into a tasty stew or hash. adding some potatoes and some leftover corn. Corn on the cob never tasted better than cooking on a fire over a campfire enjoying the great outdoors.

If you can skewer it, then you can make a skewer out of it. You can glaze the skewers with soy sauce, olive oil, seasonings, honey, or fruit juice to create any combination you like. Kids enjoy a twist on campfire cooking recipes by turning regular hot dogs onto a skewer by threading hot dog chunks with pineapple chunks and slow roasting them over a campfire.
