Quick Spiced Chicken and Vegetables

What do you need:

  • 2 large chicken breasts
  • 3 large carrots, cut into thirds
  • 4 red-skinned potatoes, cut in half
  • 2 ears of corn, quartered
  • 5 sprigs of fresh thyme
  • 1 tablespoon butter
  • 1 tablespoon olive oil plus more for frying
  • 1 tablespoon paprika
  • 2 teaspoons of salt
  • 2 teaspoons onion powder
  • 1 teaspoon rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

At home, prepare the vegetables and place them in Ziploc bags. In a small bowl, combine paprika, salt, onion powder, rosemary, garlic powder, black pepper, and oregano and place in a Ziploc bag until ready to use. At the campsite, reserve 1 tablespoon of the spice mix. Place the rest in a large zip-top bag along with the chicken. Marinate for 1 hour.

Place the vegetables in a bowl, drizzle with olive oil, and sprinkle with the reserved spice mix. Mix until vegetables are well coated. Heat oil in a skillet and cook marinated chicken over medium high heat until browned. Transfer to heavy-duty aluminum foil, then add the vegetables. Top with butter and thyme and close in foil to make a packet. Cook over a hot campfire until chicken is cooked through.

What do you need:

  • 1/2 kilo ground turkey
  • 1 large egg
  • 1/3 cup quick cooking oats
  • 1/4 cup chopped onion
  • 6 tablespoons barbecue sauce, divided, plus more for serving
  • 1 teaspoon dried marjoram
  • 3/4 teaspoon kosher salt

It is advisable to prepare the meatloaf at home, so you will only have to heat it on the campfire at the campsite! Combine ground turkey, egg, oats, 3 tablespoons barbecue sauce, marjoram, and salt in a bowl. Mix well and divide into 4 (4 x 2.5-inch) portions.

At camp, place the meatloaf portions on separate sheets. Brush with barbecue sauce and cook over a campfire for 20-25 minutes or until cooked through. Serve with more barbecue sauce. Best served with vegetables.
